I saw a "Ski Kansas" t-shirt in the stores with a picture of a cow in skis. It was hilarious, but they only had it in children's sizes. I think another good one would be a picture of a combine chasing a skier. "Kansas Extreme Skiing" or something like that...

Best "Ski Kansas" poster/picture I ever saw showed a fully dressed skier on skis and poles standing in a winter scene cut cornfield, skis perched atop the ridge between the furrows ready to ski off into the unknown.
